Bento Fun #308 – English Muffin with Egg & Ham
Hello everyone!
Today is the leap day in the leap year which only happens once every four year. Some are happy as they have an extra day but some are sad as they have to work for free today. Well, it all depends on how you look at things… To me, it is the same… I still have to wake up early to prepare breakfast and get my boy ready for school and still have to clean up the mess created by the kids…
I have not been posting for quite a while as life have been extremely hectic in the morning the past weeks. I still pack bento for Darrius but was too lazy to snap any photos since I did not ‘dress up’ his bento.

Bought a packet of English muffins last night while wanting to get a loaf of bread. I love English muffins as it has this chewy texture. I used to buy the English Muffins from McD breakfast menu and since I can easily get them from the bakery now, I’ll just make them myself… more economical too!
I only added a plum which I halves it. Darrius has not been finishing his bento if I pack more so I told him to eat half of the muffin and plum for each break. It seems there is a classmate who has been telling him he can’t eat anything else except fruits or chips during the 1st recess. Weird! I went to ask his teacher and the teacher told me some of the kids were ‘trained’ previously in their prep years that everyone can only have light snack and no sandwiches during 1st break…
Anyway, hope all of you enjoy your extra day of the year!

Yes Viv! Here sandwiches is so popular during lunch time so I think I am slowly adapting to the culture here too… making sandwiches is definitely more convenient
Hi!! it’s been a long time since I catch up on your posts! Love your english muffin sandwich! I have a recipe on my blog that you can use microwave to make breakfast muffins with eggs, bacon, and cheese. It’s worth a try! But lately I’ve just been putting peanut butter and honey and eat it open face. It’s still yummy!
I’m glad you’re still posting even though you are much more busier these days! I haven’t been posting as much, let alone making cute bentos! My lil one is already 11…pre-teens don’t like cute stuff. But I do make bentos for myself when I have the time, otherwise it would just be a ziplock container with leftovers!

Darrius’s school won’t allow them to bring PBJ to school as there are students who are allergic to peanuts (anaphylaxis)
so I have stopped giving him any PBJ though he really loves it! He only has that at home.
Seems rather small portion for both snack and lunch. What time does he get home? Won’t he be ravenous by then?
a-moms-diary, it is not that small coz it can be pretty filling (meat and egg). Darrius did not even finish
